We all have a soft spot for our all time favourite desserts.
In fact, my best friend has made it her mission in life to locate the perfect Sticky Date Pudding.
I myself, have a dangerous weakness for the classic Crème brûlée. Isn't that a beautiful phrase!
When you break down the translation, "burnt cream", the tantalizing appeal is somewhat lost amidst the instant association with bitterness that comes to mind and palate.
But, since culinary technology has evolved, the creme brulee has been treated with nothing less than the deepest respect throughout renowned restaurants world wide.
The invention of the flame torch is to thank for those golden shards of glassy caramel that are just so satifying to crack under our spoons.
That crack, I believe, is where a brulee addict first gets hooked.
Last week at Salt, in Brisbane's suburb of Rosalie (also home to the local favourite Rosalie Gourmet Market/Deli), my Sticky-Date-Soul-Mate-Seeking friend asked if she could try my obvious order of Creme Brulee. At this stage, I was yet to smash through the glorious golden barrier and was almost offended by her request. Being an addict, and having complete inability to let go of my habits, I was overcome with instinct and quickly snapped up my spoon and cracked the caramel covering.
No doubt a tad overbearing, but hey, each to their own.
I did however let her take the first scoop, which she dignified with a look of great surprise.
Perhaps even a little drool...?
My addiction began in my early teens and I've certainly indulged in my fair share of Creme Brulees from various establishments around Australia. Even though I am a self-proclaimed addict, my standards cannot be lowered just to get my brulee fix. Unlike the other French classic, Souffles, Brulees do not take hours upon hours of practice to perfect. That said, simple mistakes can result in your Brulees becoming too custardy, too eggy, too curdled, and even too creamy. The best version I have encountered, are those I make myself from a very simple and traditional recipe.

Handy Hint: always have a spare... not in case of mistakes... but to hide at the back of the fridge to secretly scoop away at in the middle of the night.
